On this very healthy episode of your favorite show Off The Menu, rapper and personal trainer, Uzikwendu joins Soliat in the kitchen to make some healthy lettuce chicken wrap.

INGREDIENTS:

  • 1 pound ground chicken
  • Black pepper
  • 1 onion, diced
  • Tomatoes
  • Fresh herbs
  • 1 lemon
  • Avocado Pear
  • Salt
  • 1 head butter lettuce

DIRECTIONS:

-Put water in a pot then add ground chicken and cook until browned, about 3-5 minutes, making sure to crumble the chicken as it cooks

-Dice the tomatoes, onions, and herbs into a bowl

-Slice the lemon into two then squeeze the lemon juice into the bowl of sliced tomatoes and onions

-Once the chicken is done, spoon several tablespoons of the chicken into the center of a lettuce leaf, taco-style.

-Place the tomatoes and onion mixture on top of the chicken, then squeeze a bit of lemon juice on it
